Sesame fillings bread | 芝蔴餡麵包

This type bread is soft and moist,  if you can not eat all at one time, put the rest of them into freezer for next time.  It is suggested that use rice cooker to steam it when eat again. It tastes more delicious.   The whole process becomes more complicated but it will be easier once you experience.

這種湯種麵包吃起來很濕潤柔軟 ,一次吃不完可以放凍箱,要吃時建議用電鍋蒸一下更好吃。 製作過程雖然比較複雜, 但有了經驗做起來也就簡單了。

  Ingredients (#1 Dough)          |        湯種麵糊成份

1/4 Cup Soy Milk         |        1/4杯豆漿

2 tbsp Bread Flour     |        兩湯匙高筋麵粉

1 tbsp butter                |         一湯匙奶油

**  Put soy milk and butter into a pot. Let it boil then take away from stove.  Add the bread flour Stir evenly cooling down.  Placed in the refrigerator for one day.

**  將豆漿及奶油放入一小鍋燒開離火, 放入高筋麵粉攪拌均勻放涼 ,放入冰箱冷藏一天備用。

#1 Dough      湯種麵團

Ingredients (#2 Dough)    |       中種麵團成份

#1 dough                            |       湯種麵糊

2 cups Bread Flour           |       兩杯高筋麵粉

1/2 tsp  yeast                      |     半茶匙酵母粉

1/2 tsp sugar                      |      半茶匙

1/2 cup warm water           |    半杯溫水

*** Mix #1 dough and  Bread Flour  evenly then add warm water until it becomes a smooth dough forms. Allow dough to rest for about one hour. Put into a plastic bag and place to the refrigerator for one day.   |

*** 將湯種麵糊及麵粉攪和均勻後加入酵母粉、糖, 加入溫水和成糰後,放置醒約一小時後,裝入一塑膠袋放入冰箱冷藏一天。

#2 Dough      中種麵團

Ingredients (#3 Dough)    |       基本麵團成份

#2 dough                            |        中種麵糰

4 cups Bread Flour           |       四杯高筋麵粉

1 tsp  yeast                        |       一茶匙酵母粉

4 tbsp sugar                      |        四湯匙

3 tsp salt                            |        三茶匙鹽

1 2 /3 warm water               |     1 2/3杯溫水

2/3 cup  Olive oil              |       2/3 杯橄欖油 

 Sesame filling    |    芝麻餡

16 Sesame filling     |     16個 芝麻餡

Instructions | 做法說明

a)  In a mixing bowl, # 2 dough break it into several small pieces mixed with bread flour.  Added sugar, salt and yeast with warm water and mix thoroughly.   |

一)  先用一容器將#2中種麵糰掰成數個小塊混入高筋麵粉後, 將糖、鹽和酵母粉加入後用溫水攪和麵粉成麵糰。

b)   Adding the olive oil  into the dough (a)  use hand press and crush. Fold and repeat flattening the dough until the oil penetrate into the dough (this action takes about 30 minutes).  Seize the dough corner  thrown into the pot repeat this action about five minutes.  Allow dough to rest about two hours (hot days) or four hours (cold weather).

二)  將橄欖油加入(一)後用手先把麵糰按壓扁, 對折再反覆的按壓扁, 直到所有的油都按壓揉進麵糰(需時三十分鐘)後,抓住麵團一角在盆中甩打,再對折再反覆甩打動作(需時五分鐘)。放置醒約兩小時(天熱)至四小時(天冷) 。

c)    Divide the dough into sixteen parts (about 100g each),  the dough is gently rub by palm this way the dough becomes round shape.  Let the dough rest for ten minutes.

三) 將麵糰分成十六個每個約100g , 用手掌心與麵板之間的磨擦輕輕搓揉滾圓 ,放置一旁醒約十分鐘。

d)  Rod the (c)  into a circle (the middle thick, thin outside). Put sesame stuffing in the middle of dough and wrap to spindle shaped. Aside and rest about 30 minutes.

四) 醒好之(三)桿成圓形(中間厚外邊薄), 中間放上芝蔴餡包成梭形排入烤盤,  醒約三十分鐘。

e )         Preheat oven 350 F , put (d) bake about 35 minutes.

五)  烤箱預熱  350 度 ,    放入烤箱烤約三十五分。

Braised Vegetarian meat | 紅燒素肉

This dish can be condiments of noodles or fried noodles.  We can mix it with rice or make it as a soup.

這道菜可以做湯麵或乾麵的作料, 也可以拌飯或做湯來食用。

Ingredients     |        成份

8 Tomatoes                                                |       8個蕃茄

1 bag Veges Stewed Lamb Chunk      |     素燉羊肉一包

Seasoning   |     調味料

2 tbsp soy protein meat sauce          |     兩湯匙陳年炸醬

6 tbsp soy sauce                                 |       六湯匙醬油

1 tbsp  mushroom powder                |     一湯匙香菇粉

2 cups water                                        |         兩杯水

2 small bags Spice foe spiced food     |     兩小包漢宮滷包

Instructions  | 做法說明

a)      Dice the Tomatoes and Veges Stewed Lamb Chunk into small pieces.

一)  蕃茄和素肉切成小塊。

    

b)   Together with all the seasonings into the pot,   stewed about 2 hours with low heat until tomatoes were crumbled .

二) 與所有調味料一起放入鍋中,小火燉煮約兩小時蕃茄都燉爛了即可。

Sesame filling | 芝蔴餡

The nutritional filling is composed of five kinds of nuts.  It is named sesame filling due to a lot of  sesame powder inside.  It can be made about twenty pieces. I usually put fillings into freezer available for making bread or buns  at any time.

這個餡料有五種果仁很營養,因為芝蔴粉比較多所以稱芝蔴餡 。 可以做二十個左右 。我通常都先把餡料做好放入冷凍箱裡備用, 做麵包或包子時隨時有餡料可包 。

Ingredients     |        材料

Roasted walnuts    100g            |       熟核桃仁       100g

Roasted almonds  100g            |        熟杏仁    100g

Roasted peanuts   100g            |         熟花生    100g

Ground flax seeds     100g        |       亞麻子仁粉       100g

Black sesame powder  200g     |           芝蔴粉      200g

Sugar   75g                                 |         糖            75g

2 tsp Stevia                                 |       甜菊(Stevia)兩茶匙

Candied kumquat     50g             |       蜜餞金橘      50g

Raisins      100g                         |         葡萄乾       100g

Olive oil     1 cup                        |          橄欖油    一碗

a)    Chop walnuts, almonds, peanuts and kumquat into powder with food processor.  Mix with Ground flax seeds, Black sesame powder, Raisins , Sugar, and Stevia.

一) 熟核桃仁熟杏仁熟花生和蜜餞金橘用食物處理機打碎,將亞麻子仁粉、  芝蔴粉、 葡萄乾、 糖甜菊(Stevia)一起加入攪拌均勻。

  

b)   Put Olive oil into (a) and mix evenly.    Each of the filling is about 50g.  Make it as round shape.    I will show how to make the sesame bread  by this type filling next time.

二) 最後加入橄欖油攪拌均勻, 做成每個50g 的圓球。 芝蔴麵包請待下回分解。

Soy Bean Cookies | 豆渣餅乾

We made soy milk every three days and left remaining soy bean grounds.  Sometimes we use them to make sesame toon pancake and steamed buns etc.  These cookies are my tasty diet food with very low calories.

每隔三天就要打一次豆漿,  都有豆渣留下,有時做香椿餅有時做饅頭包子之類。 這豆渣餅乾是我的減肥食物,卡路里低也很好吃。

Dough Ingredients           |        麵糰成份

2 cups ground soy beans      |      兩杯豆渣

2 tbsp Dry milk power           |      兩湯匙奶粉

2 tbsp Bisquick mix              |      兩湯匙鬆餅粉

30g  Sliced almonds           |      30g  杏仁片

2 tsp Stevia                           |      兩茶匙甜菊(Stevia)

30g     Raisins                       |       葡萄乾       30g

2 tbsp Olive oil                     |       兩湯匙 橄欖油 

1 tsp Vanilla extract             |    一茶匙香草精

a)     Stir all material evenly.

一) 將所有材料攪拌均勻。

b)     (A) is divided into twelve parts,  put on baking pan and squashed to round shape.

二) 將(一) 分成十二份,  放入烤盤壓扁。

   

c)    Preheat oven 350 F , put (b) bake about 35 minutes.

三)  烤箱預熱  350 度 ,    放入烤箱烤約三十五分。

Vegetarian fried noodles | 素炒麵

 Ingredients     |        成份

2 carrots       115g                                             |      紅蘿蔔兩根    115g

1/3 Cabbage     235g                                        |      包心菜1/3個      235g

4 Marinated Bean Curd      200g                     |    豆腐乾四塊     200g

1/2 cup shiitake mushroom       50g               |      四朵香菇          50g

1/2 cup  Imitation Ham(Soybean Fiber)  95g    |    半杯素火腿     95g

Sugar Peas           70g                                       |        荷蘭豆         70g

Fresh Noodles      720g                                       |         麵條            720g

Seasoning   |     調味料

1 tbsp soy protein meat sauce    |     一湯匙陳年炸醬

3 tbsp soy sauce paste                  |       三湯匙醬油膏

1 tbsp  mushroom powder          |     一湯匙香菇粉

2 tbsp water                                   |         兩湯匙水

Pan Fry Oil   |       鍋中用油

2 tbsp Canola oil                          |   兩湯匙

  

 Instructions | 做法說明

a)     Slice mushrooms, vegetarian ham  , carrots, cabbage and  marinated Bean Curd into strip shape.  Chop sugar peas oblique into 2 sections.

一) 香菇、 素火腿、紅蘿蔔、包心菜、豆腐乾切絲 ,荷蘭豆斜切成兩段。

b)     Put one tablespoon oil into a wok. Stir the mushrooms, vegetarian ham, marinated bean curd, carrots and cabbage about 2 minutes then put the sugar peas into wok.

二)  熱鍋中放一湯匙油,將香菇、素火腿、豆腐乾 、紅蘿蔔、包心菜和所有調味料依次放入鍋中翻炒約兩分鐘 ,最後放入荷蘭豆。

  

c)     Finally, put the noodles into the wok. Stir evenly with spatula and chopsticks.

三)  最後將麵條放入鍋中,用鍋鏟及筷子翻炒均勻即可。

Homemade fresh Noodles | 自製新鮮麵條

This noodles won’t be available at general supermarket.  It is fresh and tasty because of its process.

這種麵條不是在外面一般市場買得到的,  新鮮口感好。

Dough Ingredients           |        麵糰成份

4 cups Bread Flour           |       四杯高筋麵粉

1 tsp  Salt                         |        一茶匙鹽

1 cup cold water               |      一碗冷水

 Instructions | 做法說明

a)  In a mixing bowl, combine the Bread Flour and  Salt mix evenly. Pour one cup cold water into it mix with chopsticks. |

一)  先用一容器將高筋麵粉加入一茶匙鹽攪和均勻後,加入一碗冷水用筷子攪和。

    

b)    The quantity of water inside of dough is not a major concern during the process for this type of noodles.  The dough is divide into 9  parts by hand.  One part of dough is put above chop board and pressed with a rolling pin about half inch thickness. Repeat the process for the rest of material. (see photos below)

二)  因為水的份量少所以使得麵團會很乾,但是沒有關係。 在製作麵條的過程當中麵乾不是考慮的因素, 如果和麵的水多的話壓麵機壓出來的麵條會黏在一起。 將麵糰分成八九塊, 分別放在麵板上rod用桿麵棍壓桿平約半寸厚。  這樣放進壓麵機裡壓麵比較容易操作,這種方法可以不浪費麵粉。   重複這一步驟將所有的乾麵粉都桿進去(如下圖):

c)  Wild open (the largest scale)of the KitchenAid KPRA Pasta Roller Attachment for Stand Mixers  put one part of dough into roller.(see photos below)

三)準備好製麵機(KitchenAid KPRA Pasta Roller Attachment for Stand Mixers)先用最大的刻度開始,把(二)之麵片放入壓麵機。(如下圖):

  

d)    Each dough at least folding repeatedly press three times. (see photos below)

四) 每一片至少折疊反覆壓三次後。(如下圖):

  

  

  

e)  Set up the scale of pasta roller depending on personal preference. (see photos below)

五) 切麵條隨個人喜好決定麵條的厚薄粗細(如下圖):

   

e) Spread  2 tbsp oil on plate and ready stir the noodles.   Put the 1/2 noodles into to boiling water and stir with chopsticks.  Pull out the noodles into the plate after water is boiling.  Upside down the noodles with chopsticks in order to mix the oil evenly.

五) 盤子裡加兩湯匙油備用。 燒一大鍋水,水開把一半的麵條放入鍋中並用筷子將麵條散開以免黏在一起,大火燒開立即將麵條撈至盤子裡,用筷子不停的挑起使麵條冷卻不沾黏。如果馬上要吃可以省略這一步直接放入碗中。

Rainbow veggie balls | 彩虹蔬菜球

Ingredients     |        成份

Celery  70g                                       |       西洋芹菜一根   70g

2 carrots                                            |      紅蘿蔔兩根

1/3 Cabbage                                     |      包心菜1/3個

1/3 Purple cabbage                         |     紫色包心菜 1/3個

2 Potatoes                                          |      馬鈴薯兩個

Seasoning   |     調味料

2 tsp  salt                                    |      兩茶匙鹽

1 tbsp  mushroom powder      |     一湯匙香菇粉

2 Cups Cheese crispy powder      |   起司脆酥粉 兩杯

 

Instructions | 做法說明

a)     Slice Cabbage, Purple cabbage, Carrots,   Celery and  Potatoes  into strip shape.  Put 2 tsp salt and 1tbsp mushroom powder and let it soak about 5 minutes.

一) 包心菜 、紫色包心菜 、紅蘿蔔、西洋芹菜 、馬鈴薯切成細絲.  放入兩茶匙鹽和一湯匙香菇粉醃約五分鐘。

   

b)   Together with  2 Cups Cheese crispy powder   into the (a) and mix evenly.

二) 將兩杯 起司脆酥粉 加入(一)攪拌均勻,

c)    Grab the (b) material with your palm and make it as a ball shape. Align them on the plate.

三) ) 將(二)材料捏成球狀後, 排在一個大盤上 。

  

d)     Heat oil for deep-frying  veggie balls over medium heat for about 4 minutes until golden brown, remove and drain.

四) 炸油燒熱 , 中火油炸蔬菜球約至皮呈金黃色即可備用。

Tiger’s skin green pepper | 虎皮辣椒

Our good friend gave us long green pepper from farmer market. It tastes good after cooking with sugar and vinegar.

好友送來在農夫市場買的長青椒不辣,  用糖醋燒後放冷吃很下飯。

Ingredients     |        成份

2 lbs green pepper                            |      長青椒兩磅

Seasoning   |     調味料

2 tbsp soy sauce paste                  |       兩湯匙醬油膏

2 tbsp  Blue Agave or (Sugar)        |       兩湯匙龍舌蘭糖漿(Blue Agave)  或 (糖)

2 tbsp Vinegar                                  |         兩湯匙

3 tbsp water                                      |          三湯匙水

Pan Fry Oil   |    鍋中用油

1 tbsp Canola oil                     |   一湯匙

Instructions | 做法說明

a)    Green peppers are chopped into half  (about 4″ long).

一) 將青椒洗淨切半約四寸長,瀝乾水分。

b)   Heat wok without oil, put green peppers into it and stir until surfaces becoming scorched(about 50% green and 50%  yellow). Press the green pepper to dry out the water inside of it during stir.

二) 炒鍋燒熱不要放油,將青椒放入煸炒至青椒變面變焦 ,在煸炒的時候要不時翻炒並且要不斷按壓青椒,使青椒的水分出來變軟。

     

c)       Add 1 tbsp Canola oil  and seasonings cook about 1 minute.

三)  倒入一湯匙油翻炒一下 ,  加入調味料燒至湯汁乾即可。

Pizza (Chinese Style) | 中式披薩

Two(big size) or three(medium size) pizza crusts can be made by this dough.

此面團成份可以做兩個(大)或三個(小)披薩皮。吃不完的可以收藏冷凍箱隨時取用。

Dough Ingredients (Pizza Crust)          |        麵糰成份

3 cups all-purpose flour         |       三杯麵粉

1 tsp  yeast                           |     一茶匙酵母粉

1 tsp sugar                              |      一茶匙

1 1/3 warm water                   |    1 1/3杯溫水

Pizza sauce           |          披薩醬

1 tsp Vegetarian Barbecue sauce   |      一茶匙沙茶醬

1  tbsp ketchup                           |      一湯匙蕃茄醬

Pizza topping          |         披薩餡料

remaining of dish        |   剩的菜

200g Organic Cheddar Cheese  |  有機起司     200g

Instructions | 做法說明

a)  In a mixing bowl, combine the warm water, sugar and yeast.  Mix thoroughly.  It should begin to foam.  |

一)  先用一容器將溫水 、糖及發粉加入 待起泡

b)     Flour add  (a)  then mix until a smooth dough forms and allow dough to rest for about two hours  |

二) 將(一)之溫水加入麵粉用手和成糰後 要三光(手光 麵光 盆光), 放置醒約兩小時。

 

c)    Using a knife, cut the dough to check if there are many holes formed.  The dough is ready when it has leavened.    |

三)麵糰醒後用刀切開 如果中間有很多孔表示麵發好了可以開始做。

d)   This dough in this recipe can make three medium size crusts, so divide the dough in three pieces.  Roll out each dough to a large circle about 1/4 inch thick.  Make some small hole with fork (see the photo below).

四)醒好之麵糰分成三份,  拿出一份桿成約1/4寸厚圓餅  ,用叉子在麵餅上叉一些小孔。(請參看照片)

  

e)     Place the crust in the pan with medium heat  about six minutes until the bottom becomes yellowish.

五) 平鍋燒熱 (中火)將麵餅放入熱鍋中, 烤約六分鐘, 麵餅底部微黃即可。

 

f)   First coated crust with barbecue sauce, tomato sauce then put the remaining of dish.  Finally sprinkle cheese on top.

六) 餅皮先均勻的塗上沙茶醬蕃茄醬 , 再鋪前一天剩的菜, 最後將起司灑在上面。

    

g)   Bake about 12 minutes and ready to eat.

七)放入烤箱烤約十二分鐘即可。

Sweet Rice Rolls | 糯米飯糰

Sweet rice Rolls is a very popular breakfast in Taiwan. There are two varieties sweet and salty. It is very satiety coming along with a cup of soy milk.

糯米飯糰是在台灣很普遍的早點 。有甜的、有鹹的再加一杯豆漿 , 吃了很有飽足感。

Ingredients  (for 3 Rice Rolls)          |        成份(約三個飯糰)

1 fried twisted dough (Fritter)         |      油條一根

2 cups Sweet Rice                                |      2 杯糯米

3 tbsp Imitation Dried Pork                  |     三湯匙素香鬆

3 tsp Smashed preserved vegetable   |      三茶匙榨菜碎末

Instructions | 做法說明

a)     The sweet rice must have been soaked for six hours  in the cold water .

一) 糯米需浸泡六個鐘頭備用。

b)    Drain the sweet rice and put it into the electric rice cooker steaming for 30 minutes.  Divide a fritter into three sections and bake in the oven about ten minutes.  If you prefer crispy then baked a little bit longer.

二) 瀝乾糯米放盤入電鍋中蒸約三十分鐘。 油條分成三段放入烤箱 烤約十分鐘  如果喜歡脆一點可以烤多一點時間

c)    One-third of sweet rice was put above the plastic wrap then use spoon to press and flat it.  Put one teaspoon of Smashed preserved vegetable at the middle of it. The second layer is one tablespoon of Imitation Dried Pork.  Put the fritter last.

三) 將三分之一的糯米平鋪在保鮮膜,  放上一茶匙榨菜碎末 一湯匙素香鬆 一段油條

     

d)   Sweet rice is wrapped up into a cylinder shape.

四) 將糯米包裹起來成一個長形飯糰
